This is the best egg salad sandwich I remember having. The bacon adds a crispy texture along with the toasted bread, the arugula adds a hint of spice, and the combination of the roasted tomato pesto aioli and the egg salad go great together. This is enough for 2 sandwiches.
Ingredients
4 pieces of toasted artisan bread
soft boiled egg salad
4 pieces of bacon, baked until golden brown and crispy
arugula
2 tbl roasted tomato pesto aioli
Build your sandwich with about half a tbl of aioli spread on each piece of bread. Layer the egg salad, bacon, and then top with arugula.
