Caramelized Onion Jam

This is really good on a steak sandwich or by itself on a piece of toast.  You could add it to the middle of a grilled cheese sandwich with gruyere or a similar cheese.  It's flavor is a balance of sweet from the onions and tangy from the balsamic.  This is a really easy and quick jam to make, it took me less than a half an hour to make and the longer it sits in your refrigerator the better it gets!

1 onion, thin slice
1/2 cup sugar
3 cloves of garlic, crushed
1/4 cup balsamic
1/8 cup water
dash of ground cloves
dash of cayenne
1/4 tsp ground mustard
1/4 tsp paprika
1 tsp thyme leaves
1/2 packet of pectin
1/2 tbl butter
1/2 tbl olive oil
salt and pepper to taste


First caramelize the onions, melt the butter and add the olive oil to a pan.  Add the onions, about a table spoon of sugar, salt and pepper to the butter and cook on medium low heat until the onions are golden brown.  About halfway through add the garlic.


Add the cloves, mustard, paprika and cayenne and stir.  Then add the balsamic and let bubble down a bit.  Slowly add the rest of the sugar.





Add the water and stir in the pectin.  Bring the mixture up to a light boil for about 1 minute, until it has thickened.


Pour the mixture into a storing container, preferably a mason jar, and put in your refrigerator for at least an hour before you use it.
