Chimichurri Sauce

This is a great herb sauce that is perfect for tacos, burritos, fajitas, steak, as a salad dressing, and pretty much anything else you can imagine.  It is traditionally an Argentinean sauce made from garlic and parsley, but I have added cilantro, green onion, and shallot.


1 Shallot
1/2 bunch cilantro
1/2 bunch flat leaf parsley
2 green onions, chopped into a few large pieces
1 tbl red wine vinegar
juice of 1 lime
1/3 cup olive oil
salt and pepper to taste

Combine all ingredients in a food processor and blend.
