Creamy Apple Vinaigrette

This is a unique vinaigrette that has sweetness from the apples and the tanginess from the white wine vinegar.  The yogurt smoothes everything out and makes it perfect on bed of spinach.

Ingredients

1/2 of an apple, peeled and cored rough chopped
2 tbl white wine vinegar
4 tbl olive oil
1 clove garlic
2 tbl water
4 tbl plain greek yogurt
drizzle of honey
salt and pepper to taste

Add the apple, vinegar, garlic, water and honey to a food processor.  Blend until completely incorporated and then let sit in the refrigerator for at least 2 hours.  Strain the mixture through a cheese cloth to remove the thick parts of the mixture.  Add the greek yogurt to that mixture and whisk together.  Continue whisking and slowly add in the olive oil.  Season with salt and pepper and add to your salad.
