Pina Colada with Real Coconut

The real cocoanut juice adds a lot of freshness to this cocktail.  I still add a little of the coconut cream to add the creaminess that you expect from a pina colada, but it does not mask the fresh juice.


The juice of 1 coconut
about 3 tbl spoons coconut cream
1/2 cup of pineapple juice
juice of 1 lime
3 oz rum

To open a coconut use a clever and take out some aggression.   Just try and make an opening by hacking at the same spot and drain out the juice into the blender.

Add the rest of the ingredients, blend, and serve.
