Sweet Potato Fries

Sweet potato fries are a good substitute for regular fries because sweet potatoes are very healthy for you. I like to soak mine in a seasoning blend and then season with garlic powder, salt, and pepper when they are right out of the fryer.

Ingredients
1 lb sweet potatoes
1 tsp tumeric
1 tbl brown sugar
1 tbl garlic powder, divided into 2
2 tbl salt, divided into 2
2 tbl black pepper, divided into 2
1 tbl paprika
1 tsp cayenne
1 tsp cumin
enough vegetable oil to fry

First carefully slice the sweet potatoes into fries.  Soak in water, with the tumeric brown sugar, half the garlic powder, half the salt, paprika, cayenne, cumin.  Soak for at least 2 hours, making sure all the fries are covered with the water and spice mixture.

Preheat your oil to 325.  Dry the fries off with a paper towel.  In batches fry the fries for about 2 minutes and place them on a wire rack.

Preheat the oil to 365.  Fry the fries again in batches again and keep an eye on them because they brown quickly.

Once out of the fryer shake them in the remaining salt, black pepper, and garlic powder.
