Home Style Potato Hash Browns

These are a good substitute for regular hash browns if you do not feel like going to the trouble of shredding a bunch of potatoes.  They have a crispy crust and a soft center, the small bites of garlic and onion caramelize in the skillet.  This is great for breakfast, but you can also have it for dinner with a steak.

Ingredients
1-2 Large Yukon Gold Potatoes
2-3 Tbl Vegetable Oil
1 Clove of Garlic
1/4 Sweet Onion
1 Tsp Paprika
Salt and Pepper

Dice the potatoes length wise in half, then slice into 1/2 inch strips.  Cut those strips into match sticks and then cut those match sticks into small squares.  Put a cast iron skillet on the burner and preheat on medium high heat.  Once the skillet is heated add the vegetable oil, wait a few seconds, and then add the potatoes.  Let the potatoes cook on once side before seasoning, right before you stir the onions season them.  Try to flip the potatoes as few times as possible.  While the potatoes are cooking dice the garlic and onion very fine.  When the potatoes are crispy and golden brown turn the burner off and add the garlic and onion.  Stir to make sure they do not burn, be careful not to break the potatoes.  Serve with Ketchup and enjoy!
