Roasted Tomatoes

This is a really easy recipe that completely changes the texture and taste of tomatoes.  You can add these to a sauce, spread, or put them right on your sandwich.


2 ripe tomatoes, sliced
1 tbl fresh thyme
1 1/2 tsp salt
fresh ground black pepper
1 tbl olive oil

Preheat the oven for 400 degrees.

Place the tomatoes on a roasting pan lined with tin foil.  Sprinkle with the salt, black pepper, thyme and olive oil.

Bake for about 15 to 20 minutes.
